Lemon Meringue Blondies

It's time for another baking recipe from Jane's Patisserie, this time Lemon Meringue Blondies.

Let's get baking!

Ingredients:
200g unsalted butter, melted
125g light brown sugar
125g granulated sugar
3 medium eggs
275g plain flour
1 tbsp cornflour
Zest of 1 lemon
150g white chocolate chips
100-200g lemon curd
4-6 meringues

Start off by preheating your oven to 180C/160C Fan/Gas Mark 4 an line a 9" square tin.

Next mix the melted butter with the brown and granulated sugar.


Next add the eggs and mix agian.

Add the flour, cornflour, chocolate chips and lemon zest and mix.

Next fold through the slightly crushed meringue, and pour the mix into the tin.


Dollop the lemon curd on and swirl through the lemon curd slightly.

Bake in the oven for 25-30 minutes, until there is a wobble in the middle, and then cool in the tin.

Set the blondies in the fridge for 2+ hours, and enjoy.




These blondies were delicious an really easy to make. They're very moreish and didn't last too long before they were all gone.
