Oogie Boogie Lemon Meringue Cupcakes

What better time to share these cupcakes, as we get closer to Halloween. These are definitely the perfect Halloween bake, especially for those that are fans of The Nightmare Before Christmas.
This recipe comes from Tim Burton's The Nightmare Before Christmas The Official Cookbook & Entertainment  Guide, which is full of fun recipe's as well as party ideas.

Let's get baking!

Ingredients:
Cupcakes:
2 cups plain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
10 tbsp unsalted butter, room temperature
3/4 cup caster sugar
finely grated zest of 1 large lemon
2 large eggs
1 1/4 cup buttermilk
2 tbsp fresh lemon juice

2 large egg whites, room temperature
2/3 cup granulated sugar
1/8 tsp salt
1/4 cup water
1 tsp vanilla extract
1/8 tsp green gel food colouring

Start off by making the cupcakes, pre-heat your oven to 190C Fan/Gas Mark 5 and line 2 cupcake/muffin trays with cupcake/muffin cases.

In a small bowl, whisk together the flour, baking powder, bicarbonate of soda, and salt.

In another bowl, with either a stand mixer or hand-held mixer, beat together the butter, sugar, and lemon zest on a medium-high speed, until light and fluffy.

Add the eggs one ant a time and beating well after each addition.


Scrape down the sides of the bowl with a rubber spatula. Then add the green food colouring, and a third of the flour mixture and mix on a low speed until blended.


Add half of the buttermilk and lemon juice and mix on a low speed until combined.

Add another third of the flour mixture, then the remaining buttermilk and mix just until blended. Add the remaining flour mixture and beat until blended.
Scrape down the sides of the bowl and give the batter a stir.


Divide the batter evenly among the prepared cases, filling them bout three-quarters full.
Bake in the oven for about 20 minutes, or until the tops are puffed and a toothpick inserted into the center comes out clean.
When baked, remove from oven and allow to cool for 10 minutes in the tin, then let cool completely on a wire rack. Allow to cool for at least 1 hour.

Once your cupcakes are cool move on your meringue frosting.

In a heatproof bowl, whisk together the  egg whites, sugar, liquid glucose/corn syrup, salt and water.



Set the bowl over barely simmering water in a saucepan. Using an electric hand-held mixer, beat on a medium-high speed to stiff peaks, about 5 minutes.

Remove the bowl from over the water and continue to beat until the mixture cools, about 2 minutes.

Add the vanilla ad food colouring and beat until blended. I did forget to take a picture of the end of beating, hence an empty bowl.

Transfer the frosting to a large piping bag fitted with a 1/2-inch round tip. Pipe an Oofie Boogie blob of frosting onto each cupcake. Add 2 mini chocolate chips for eyes.
Serve at once or refrigerate for up to 1 day before serving.


These were easy to make but, they did get a little messy, especially with the meringue frosting.
They tasted really nice and I'd happily bake them again.
They really are perfect as a Halloween treat or even part of the dessert table at a Halloween party.

WRLD is the 3rd mini album from THE ROSE.
On the 6th of May 2025, WRLD First Spin was released.

On the 2nd of June 2025, the Tomorrow Official Live Performance Video was released, along with the O Official Live Performance Video.

The members of THE ROSE wrote, composed and arranged all the tracks on the album.

WRLD peaked at No.19 on the Circle Albums Chart.

The M/V for 0 has so far gained 556,877 thousand views, with the views still continuing to increase.

WRLD was released in 3 versions: Deluxe, Jewel and LP.
The Deluxe version is set out in a box case and comes with the Cd, photobook and a random photocard.
The Jewel case version as 2 versions: Ver. 1 and Ver. 2. Both versions are set out in a jewel case and comes with the Cd, photo & lyric booklet and random photocard.
The LP versions is set out in a fold-out case and comes with the white vinyl record, photo & lyric booklet and a random photocard.

I have the deluxe version, I really like the photobook, the pictures are really simple and down to earth, which I think definitely fits The Rose as they're a really down to earth group.
The album itself is amazing and definitely has a new vibe and style, it gives me Coldplay and The Beatles vibes with that The Rose flair.

As soon as 숨 (Breath) starts you know this album is going to be different. I love the melody for this track, it perfectly eases you into the album.

I absolutely love Nebula, the melody is stunning, it gives me Snow Patrol vibes and I absolutely love Dojoon's voice in this song. His vocal tones work perfectly and beautifully with the melody.

I feel like this is going to be a repeated statement with each of these songs, but I absolutely love O. I love the melody, I love Woosung and Dojoon's vocals. They're a group that know what works for them and they know how to excel at what they do. They really know how to heighten their talents and make them stand out, and for me this song shows that.

I love that the tempo speeds up a little for Tomorrow. Yet again, I love this track. I think this is definitely one of my favourite tracks on this album.

I love the melody for Nevermind. I love how it starts off soft and changes up through the song, it has power behind it.

I love the melody for Slowly. Listening to this song, you can't deny how talented The Rose are and for me, this is one of the songs that shows that they don't just create music, they create art.

Yet again I love the melody for Ticket To The Sky. I love Woosung and Dojoon's voices in this song, I sometimes forget that even though they have such different vocal tones, they really compliment each other.

I love how slow and laid back this album is. I remember being shocked and surprised by how they were touring smaller venues for this album, thinking it was a step back for them, but on my first listen on this album it all made sense. This album has such an intimate sound and vibe to it, that I don't think it would have worked as well in larger venues. I love The Rose's rockier sound, but for me with this album, it definitely wasn't missed. For me this album is on more of a personal level and I'm happy they created an album like this, to show not only how grounded they are but also how talented they are.
I can't wait to see what they bring us with their next release and I hope I get to see them live again on their next tour.
