Sticky Pork Noodles

I was scrolling through recipes on Morrisons' website when I came across these Sticky Pork Noodles and couldn't miss giving them a try.

Let's get cooking!

Ingredients:
4 pork loin steaks/medallions cut into strips
350 g stir-fry vegetables
300 g noodles - you can use fresh or dried noodles
1 tbsp sesame seeds
2 limes, zest and juice
2 garlic cloves, crushed
4 tbsp hoisin sauce

In a shallow bowl, mix together the lime zest, juice, garlic and hoisin sauce. Pop the pork in and coat well, cover and set aside.



Next heat either a large frying pan or wok on a medium high heat, then add the pork with all the marinade and stir continuously for 5 minutes.

Next add the vegetables and stir-fry for 4 minutes until hot but still crunchy.

Next turn the heat down to medium, add the noodles, mix well and heat for a further 2 minutes or until the noodles are piping hot.

Remove from the pan and divide the stir-fry between 4 bowls, then sprinkle over the sesame seeds and serve immediately.



I love this dish and recipe, it's so easy and quick to cook, even Skye did a pretty good attempt at giving it a try. She's always happy when I make dishes like this because it means we get to use chopsticks, I'm actually making this again tomorrow for our tea. I love the flavours, the first time round I didn't used coriander which is optional in the original recipe, but tomorrow I'm going to give it a go with the coriander and see if it adds anymore flavour to the dish.

Corned Beef Chilli

I'm going to share with you a recipe I came across when I decided I wanted to have a go at cooking some Chilli. I was expecting this to be really hard and time consuming but it's really easy and simple.
Let's get cooking!

Ingredients:
340 g Princes corned beef
1 tsp sunflower oil
1 onion, peeled and diced
1 garlic clove, crushed
1 tsp cumin
1 tsp chilli powder
400 g chopped tomatoes
1 tbsp tomato puree
150 ml beet stock, made with 1/2 a stock cube
1 sprinkle ground black pepper
400 g red kidney beans, drained & rinsed

Start off by heating the oil in a large, heavy-based pan and fry the onion and garlic until softened.

Next add the cumin and chilli powder and cook for a further minute.

Next add the tomatoes, tomato puree and the beef stock, season with salt and pepper. Bring to a simmer and cook over a gentle heat for about 10 minutes, stirring occasionally.

Cube the corned beef and add to the tomato sauce, with the kidney beans, give it a good stir and cook for another 10 minutes, before removing from the heat.

You're now ready to serve, you can serve it with rice, jacket potatoes and a green salad, or even just with crusty bread.

I served mine with rice.

This is now one of my go to recipe's, while Skye may not be a fan and like it, I love it so it comes in handy for me to cook, allow to cool and then pop it in tubs and stick them in the freezer. It's so easy and simple that I have no idea why I feared making chilli, I've never thought about it being cooked with corned beef either, I always thought it would be with minced beef.
This is such a tasty dish and only takes around 35 minutes at the most, so you're not waiting too long after a long and hard day at work. No matter how many times I cook this, I always enjoy eating it.

I came across this recipe on the Morrisons recipe section, which they post that the Corned Beef Chilli recipe is provided by Princes. The original recipe calls for you pan to be loosely covered when you first cook the tomato sauce, which I didn't do but if you want to follow the original recipe I have provided the links above.
