Sometimes when it's just way too hot, or you want something quick and easy, also when you want something tasty and healthy, yes food can be healthy and tasty at the same time, you just have to cook up some steamed salmon.
Let's get cooking!
Ingredients:
40g butter, melted
4 salmon fillets
finely grated rind and juice of 1 lemon
1 tbsp snipped chives
1 tbsp chopped parsley
salt & pepper
Start off by pre-heating your oven to 200C/400F/Gas Mark 6.
Cut for 30cm squares of tinfoil and brush with the melted butter.
Next place a piece of salmon on each square and spoon over the lemon rind and juice.
Then sprinkle on the chives, parsley and salt & pepper.
Wrap the foil over loosely and seal firmly with the join at the top.
Place the parcels onto a baking tray and place into the oven and bake for 20 minutes, or until the fish flakes easily.
Now you're ready to serve, you can serve it with crusty bread and a salad, or even steamed vegetables and some herby baby potatoes, like me.
I thought this dish was gorgeous, it was full of flavour, refreshing and the salmon flaked and fell apart as soon as popped your fork in it.
Skye on the other hand just sate the veg and potatoes, as she didn't like the salmon and has since decided she's not a fan of fish or seafood.
This was really easy to make and the recipe was really easy to follow, it's definitely a good recipe if you're not confident when it comes to cooking.
I got this recipe from a recipe book that I've had for a really long time, called Beginners Step-By-Step, it gives you step-by-step instructions as well as the pictures to follow, all the recipes have different difficulties and are set out so in each chapter and this Steamed Salmon is in the Novice section.
If you would like to get your hands on this cookbook, it is still available on Amazon.
See you soon!
