Healthy Apple Muffins

Back in September we headed to London for a concert and I thought I'd bake us some snacks that we could have as breakfast snacks too. I came across this Apple Muffin recipe that I'd thought I'd give a try as I thought these would be perfect for what I was thinking. This recipe comes from Sally's Baking Recipe's.

Let's get baking!

Ingredients:
260g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
2 tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp salt
2 large eggs
133g unsweetened applesauce
160ml pure maple syrup
70g coconut oil
1.5 tsp pure vanilla extract
210g shredded/grated Pink Lady apples (about 2 peeled apples)

Below temperatures are for mini muffins.
Preheat your oven to 350F/177C. Line a muffin tray with cupcake liners, I often use fairy cake liners for things like this to get more out of the batter.

In a large bowl, add the flour, baking powder, bicarbonate of soda, cinnamon, allspice and salt. Whisk together until combined. Then set aside.

In a medium bowl, add the eggs, applesauce, coconut oil, maple syrup and vanilla extract, Whisk until combined.

Next pour the wet mixture into the dry mixture and stir a few times.

Next add the grated apple, and fold everything together until combined. You will be left with a thick batter.

Spoon the batter into the cupcake liners, if like me your making mini muffins bake them in the oven for 11-14 minutes.
Allow the muffins to cool for 5 minutes in the muffin tray, and the transfer to a cooling rack to continue cooling.


You can eat these muffins either warm or cold.

These were really nice and easy to make. They were a perfect treat for either a snack or breakfast muffin. I'll happily bake these again. They're also really nice both warm and cold. I think this is definitely perfect someone that wants to eat healthier while still wanting a sweet treat now and again.

Chocolate Chip Muffins

It's nothing new for me when it comes to baking buns and cupcakes, but I've never attempted to bake muffins before, the recipe I followed was a basic muffin recipe from the BBC good food website, which I will share with you at the end of the post.
Lets get baking!

Ingredients:
2 medium eggs
125 ml vegetable oil
250 ml semi skimmed milk
250 g golden caster sugar
400 g self raising flour
1 tsp salt
100 g chocolate chips

Start off by preheating your oven to 200C/180CFan/gas 6 and then line 2 baking trays with your muffin cases.

Next in a large bowl beat the 2 medium eggs lightly, for 1 minute with a handheld electric mixer.

Next add the 125 ml vegetable oil and the 250 ml semi skimmed milk and beat until just combined.

Next add your golden caster sugar and whisk until you have a smooth batter.

Next sift in the 400 g self raising flour and 1 tsp of salt and then mix until smooth, then stir in the chocolate chips.

Fill your muffin cases two-thirds full, and bake for 20-25 minutes, if you cannot fit your trays onto 1 shelf, swap the shelves around after 15 minutes of baking.

Once baked, leave the muffins in the baking tray to cool for a few minutes and then place on a wire rack to cool completely. Once completely cool they're ready to enjoy.

I think I left mine in the oven a little too long as the colouring was dark on a few of them and tops being a little tough compared to the inside, other than that I thought this recipe was really easy to follow and the muffins tasted really nice and were really soft. They didn't stay on my kitchen worktop very long before they were all eaten.
