Toffee Banana Spring Rolls

Back in February I went on the hunt to find recipes to celebrate the Lunar New Year aka Chinese New Year and I came across these sweet spring rolls for our dessert.

Let's get baking?

Ingredients:
100ml sunflower oil, for frying
3 sheets of Filo pastry
60g dulce de leche
3 bananas, halved widthways
Chinese five-spice powder, for sprinkling

Warm the sunflower in a saucepan, or heat your deep-fat fryer to 180C.

Meanwhile, cut each sheet of filo pastry in half vertically.

Next spread 2 tsp of dulce de leche over a halved banana.
Sprinkle over some five-spice, then put the banana at the bottom of the halved filo sheet.

Roll the filo sheet up and around the banana, folding in the sides with each roll so that they look like spring rolls. Brush some water across the seam of the spring roll to seal.
Repeat this process with the remaining banana halves.

Deep-fry 3 rolls at a time, until crispy and golden, then place on kitchen roll to drain.

Slice in half and serve, the original recipe suggests serving them with coconut ice cream and scattered with toasted black sesame seeds.
I just served them on their own.

I thought this recipe was a lot easier to pull off than I thought it was going to be, while a little messy and time consuming, it was a easy recipe to follow.
I loved the flavours and would definitely make them again to try with coconut ice cream.
Skye wasn't too fussed but she can be a bit picky when it comes to stuff like this.

If you would like to check out and follow the original recipe, then head to BBC's Good Food Toffee Banana Spring Rolls recipe page.

See you soon!

Sticky Toffee Pudding

Hello

I really need to get looking at some baking recipe's, I really love baking but lately I never seem to do much when it comes to new bakes.
Today I'm going to share with you the sticky toffee puddings from the Pinch of Nom recipe book.
Let's get baking!

Ingredients:
Low-calorie cooking spray
75 g self-raising flour
1 tsp baking powder
1 tbsp black treacle
3 tbsp granulated sweetener
50 g reduced-fat spread
3 medium eggs
1 tbsp golden syrup

Start by pre-heating your oven to 190C/Fan 170C/ Gas mark 5 and spray four ovenproof ramekins  with the low-calorie cooking spray.

In a large bowl put the flour, baking powder, black treacle, sweetener, spread and eggs, and whisk with an electric hand held whisk until fully combined. light and airy.

Evenly distribute the golden syrup between each ramekin, for this I actually did half a tablespoon in each of the ramekins.

Next top the golden syrup with the cake mixture and bake in the oven for 20 minutes until just cooked through.

Once baked, remove from the oven and leave to cool slightly in the ramekins.

After allowing to cool slightly, turn out into either a bowl or onto a little plate. You can also serve them with your choice of accompaniment like custard or cream.
I served mine on their own.

This went down a treat with both myself and Skye, I'm thinking next time I'll have them with cream and custard and see if benefits the flavours any better. These even tasted nice after a few days, which I think is a bonus as the recipe makes 4 and there is only me and Skye at home. I re-heated the last 2 and they tasted just as nice and fresh as if they were only just baked.
I will be baking these again and think they will be perfect for after bigger meals like on a Sunday after our Sunday dinner.
They are really quick and simple to make and I think anybody can make these with ease.

If you're interested in any of Pinch of Nom's recipe's then you can buy the recipe book in all major supermarkets as well as online retailers Waterstones and Amazon.

See you soon!

Lush: The Way To Bathe: Yog Nog & The Magic of Christmas Reviews

Hello

It's time for another Lush post and in this post I'm going to review two of the Christmas products I purchased a while ago, two scents I love about Christmas is cinnamon and ginger and any products that may have these ingredients for me are a must. I definitely have a favourite out of these two products I'm sharing with you today.

Yog Nog Bath Bomb
Lush Description
Sweeter than dipping into the biscuit tin, this luxurious bomb is sure to warm you up cold, frosty evenings. Spicy clove bud oil stimulates the senses whilst soya milk powder and organic shea butter create creamy, comforting waters. Luxuriate in cinder toffee soaks with clouds of gold and a touch of lustre.

I wouldn't say I loved this one but I would definitely buy it again and offer it a second chance at wooing me, although it did smell nice it wasn't one of my favourite's in the scent department, hopefully when I give this one a second try I'll be able to smell the toffee a lot better and hopefully it will smell better. It sent the bath such a pretty colour and it left me feeling relaxed and also left my skin feeling soft and moisturised.

The Magic of Christmas Bubble Bar

Lush Description
Foam alone? Stir up a whole lot of Christmas magic with this warming cinnamon stick. It's packed with punchy cinnamon leaf and Fair Trade Organic clove to stimulate the skin and boost circulation whilst fast forwarding you straight into the festive season! Treat Grinch-like moments by holding this spicy bubble wand under running water and slipping into a blanket of hot, almond bubbles.

I used this one when I had a banging headache and I'm so glad to say it eased it and made me feel so much better, I left the bath smelling gorgeous, not only that my skin was left feeling soft as well as myself feeling refreshed. I'm constantly telling Skye off for messing with the bath bombs when she uses them telling her to leave them be and dissolve but on this occasion I found it difficult myself especially the cinnamon stick. I would highly recommend this Bubble bar to any Grinch and Scrooge out there to  get them into the Christmas spirit, I will definitely be making a purchase of this one again while it's still available.
*sadly I didn't take any pictures of this one*

When ever I go shopping Lush is my weakness and I can't wait to go and get some more Christmas products to try out, can you recommend any to me, if so comment below I'll be making a visit later this week.
See you soon!
