Beorn's Honey Cakes

For Christmas last year (2025), I got Skye a recipe book that contains recipe's from Tolkien's world, so recipe's from The Hobbit and Lord of The Rings.
So when it came to her birthday, I wanted to have a day of things made from the book, and to start the day it was these Honey Cakes.

Let's get baking!


Ingredients:
125g plain flour
1 tsp baking powder
1/4 tsp bicarbonate of soda
75g unsalted butter, melted
75f light muscovado sugar
2 eggs, beaten
2 small, very ripe bananas, mashed
4 tbsp clear honey

Start off by lining a muffin tray with 12 paper cupcake cases and preheat the oven to 160C/Gas Mark 3.

Sift the flour, baking power and bicarbonate of soda into a bowl.

Mix together the melted butter, sugar, eggs and mashed bananas into a separate bowl.

Tip in the dry ingredients and mix together gently until evenly combined.

Divide the mixture between the cupcake cases.
Bake in the oven for 20-25 minutes or until risen and just firm to the touch.

Once baked, transfer to a wire rack and drizzle  each cake with 1 tsp of honey.
Serve warm or cold.






You may notice I used light brown sugar as I didn't have any muscovado sugar and it still worked perfectly
These were really easy to make and were delicious. They didn't last too long before both myself and Skye ate them all. They're definitely perfect as either sweet treat or a breakfast snack.
I can't wait to bake another batch to enjoy.

Banoffee Pie

Last year, one of the desserts I baked for Christmas day was a Banoffee Pie, this recipe comes from Jane's Patisserie.

Let's get baking!

Ingredients:

Biscuit Crust:
300g Digestive biscuits
150g Unsalted butter (melted)

Filling:
375g Caramel
2-3 Large bananas (sliced)

Topping:
450ml Double cream
50g Icing sugar
25g Chocolate curls

Start off by crushing your biscuits, you can use a food processor for this, or even use a rolling pin to crush them up. I use my Nutri Bullet for mine, gives me a really fine crumb.

Pop your butter into a small pan and gently melt.
Once melted add to your biscuits and mix together well.

Press the biscuit base into the sides of a loose bottom tart tin, or even a loose bottom cake tin.

Next pour your caramel onto your biscuit base and smooth over.

Next slice your bananas and push them into the caramel.

In a large bowl, whip your double cream and icing sugar into soft peaks.


When ready, pipe or spread over the top of the caramel and bananas.

Sprinkle over some chocolate curls, slice and serve.

I've never made a Banoffee Pie before and this recipe was really easy to follow and make and it went down a treat.
It tasted really nice and I've even made another to take to work for some people, even they said it tasted really nice.
This will definitely be a regular bake because it's just divine.

Toffee Banana Spring Rolls

Back in February I went on the hunt to find recipes to celebrate the Lunar New Year aka Chinese New Year and I came across these sweet spring rolls for our dessert.

Let's get baking?

Ingredients:
100ml sunflower oil, for frying
3 sheets of Filo pastry
60g dulce de leche
3 bananas, halved widthways
Chinese five-spice powder, for sprinkling


Warm the sunflower in a saucepan, or heat your deep-fat fryer to 180C.

Meanwhile, cut each sheet of filo pastry in half vertically.

Next spread 2 tsp of dulce de leche over a halved banana.
Sprinkle over some five-spice, then put the banana at the bottom of the halved filo sheet.


Roll the filo sheet up and around the banana, folding in the sides with each roll so that they look like spring rolls. Brush some water across the seam of the spring roll to seal.
Repeat this process with the remaining banana halves.

Deep-fry 3 rolls at a time, until crispy and golden, then place on kitchen roll to drain.


Slice in half and serve, the original recipe suggests serving them with coconut ice cream and scattered with toasted black sesame seeds.
I just served them on their own.


I thought this recipe was a lot easier to pull off than I thought it was going to be, while a little messy and time consuming, it was a easy recipe to follow.
I loved the flavours and would definitely make them again to try with coconut ice cream.
Skye wasn't too fussed but she can be a bit picky when it comes to stuff like this.

Banana Split

I thought I'd share with you a recipe that you could have either as a breakfast treat or even as a dessert, this recipe comes from the Pinch of Nom Everyday Light recipe book, this recipe can be found in the Breakfast chapter.

Let's get making!

Ingredients:
2 bananas
200g fat-free Greek yoghurt
1 tbsp granulated sweetener
1 tsp vanilla extract
10 blueberries
4 strawberries
25g flaked almonds
2 fresh cherries

Peel your bananas and cut them in half and then cut them in half again, this time lengthways.
Then arrange on 2 plates.

Mix the Greek yoghurt, sweetener and vanilla extract together.

Thinly slice the blueberries and strawberries, reserving 2 strawberry halves for garnish.
Stir the sliced berries into the yoghurt.

Spoon the yoghurt mix onto the middle of the banana slices.

Sprinkle the flaked almonds on top and decorate with the cherry and strawberries, reserved earlier.
Now you ready to enjoy.

This recipe is really easy and quick to make, there's no cooking or baking involved, it takes about 5 minutes to make. I absolutely loved this and would happily eat it often as part of a healthy breakfast.
Skye wasn't too fussed but that's probably because she's insanely picky with food.
I think with the weather starting warm up, this is a perfect treat to enjoy in the garden or as a nice healthy and refreshing dessert.
