I cam across this recipe on Instagram via someone I'm following, it looked really easy to cook and also looked liked something both myself and Skye would enjoy eating, so I decided to give it a try.
Let's get cooking!
Ingredients:
Half a onion, diced
80g Halloumi, cubed
80g Chorizo, halved
160g Pasta
60g Sun-dried tomato pesto
Garlic bread (optional)
First up boil some water and add your pasta to the pan and cook per pack instructions.
Next on heat some oil in a pan on a medium heat and add the diced onion and cook until softened.
Next add the halloumi and chorizo, and cook until it's nice and crispy.
Next add the pesto, with a couple of tbsp's of water if needed and mix together.
Once you pasta is cooked, drain and add it to the pan.
Mix it all together, make sure it's all warmed through.
Plate up and serve.
This went down a treat with both myself and Skye, all the flavours work so well together.
This is a perfect recipe for anyone that feels like they are a novice cook, it's also a good dish to cook the day before to take to work with you for your lunch break. It's not time consuming and is really easy to follow.
