Cinnamon Roll Blondies

It's that time of the year, that's the perfect time for all sorts of bakes, and this time I'm going to share with you Cinnamon Roll Blondies from Fitwaffle Kitchen from Instagram.

Let's get baking!

Ingredients:
Blondie:
170g unsalted butter, softened
165g light brown sugar
100g granulated sugar
1 large egg
1 egg yolk
2 tsp vanilla extract
215g plain flour

Cinnamon Layer:
60g unsalted butter, melted
40g dark brown sugar
40g granulated sugar
2 tbsp cinnamon

Topping:
30g granulated sugar
1 tsp cinnamon

Start by pre-heating you oven to 160C (Fan), and line a 8x8 tin with baking parchment.

Next add the, light brown sugar and granulated sugar into a bowl and cream together.

Next add the egg and egg yolk, along with the vanilla extract and mix until fluffy.


Next add the flour and fold it into the mixture.

For the filling, put the melted butter, dark brown sugar, granulated sugar, and cinnamon into a bowl and mix together, until fully combined.


Put half of the blondie mixture into your lined tin and smooth it out.

Add the filling and smooth out over the top, then add the other half of the blondie mix and smooth out.
Mix together the granulated sugar and cinnamon and sprinkle over the top.


Pop it into the oven and bake for 25 minutes.
Once baked, cut into slices and enjoy.


These were really nice, which meant they didn't last very long before they were eaten.
The recipe was really easy to follow, I'd happily make them again. I think they're perfect for any time of the year, I think these would be perfect at Christmas too, especially with the cinnamon.
