Simply Cook

Cook restaurant quality meals!
Each box comes with 4 recipe kits and 4 step-by-step recipe cards.

First from this box I cooked the Mexican Beef Quesadilla. In this kit you get Quesadilla Paste, Pico de Gallo Salsa and Spicy BBQ Sauce

Heat your oven to 160C/140C Fan/Gas Mark 3.

Cook the filling.
Heat a little oil and fry half of the red onion for 3 minutes.

Turn up the heat and add the beef mince and fry for 3-4 minutes.

Add the Quesadilla Paste and half of your chopped tomatoes and cook for another 5 minutes.

Make your condiments.
For the salsa, put the other half of the red onion into a bowl, along with the rest of your chopped tomatoes. Mix in the Pico de Gallo Salsa and keep aside.

For the dipping sauce, stir the Spicy BBQ Sauce into the soured cream and keep aside.


Cook the quesadillas.
Heat a little oil in a large non-stick frying pan over a medium heat. Place a tortilla in the pan and, on one half of the tortilla, layer grated cheese, then spread a spoonful of beef mince on top, then another layer of grated cheese.


Fold the empty side of the tortilla over to make a half-moon shape and flatten it down with a spatula.
Cook until lightly golden and crisp, then flip it and cook the other side for 2 minutes. Then place in the oven on a tray to keep warm while you cook the others.

Serve!
Cut the quesadillas into wedges and serve with salsa and the dipping sauce.


I really liked this dish, the salsa was really nice, as was the dipping sauce, I'd have preferred more cheese in my quesadillas but the flavours were really nice and I would give this another try.
I did find it a little bit fiddly while cooking the quesadillas and found they didn't always stick together on the edges.


Next from this box I cooked the Bang Bang Chicken. In this kit you get Bang Bang Paste, Garlic & Coconut Paste and Chilli Garnish.

Fry the chicken.
Heat a little oil in a frying pan and fry the chicken for 2 minutes.

Stir in the Bang Bang Paste, then add the peppers and fry for 2 more minutes.


Mix in the coconut milk and bring to a gentle boil, then reduce the heat to a simmer.

Develop the flavours.
Add the Garlic & Coconut Paste and peanut butter and mix well.
Add the spring onions and cook for 2 minutes, or until the chicken is cooked through.


Cook the noodles.
Boil the noodles.

Stir in the Chilli Garnish into the chicken pan, then add the noodles with 2 tbsp reserved noodle water and toss to coat.

Serve!


I liked this dish, it seemed really creamy with the peanut butter and coconut milk, Skye wasn't a fan because of the peanut butter.
I thought the flavours were really nice and I'd happily cook it and try it again.

I've cooked the both the Chicken Katsu Curry and the Japanese Seared Steak in a previous box, and enjoyed them, we've had them a few more times as well since then.
