Pumpkin Spice Cupcakes

I shared with you Jane's Patisserie's Pumpkin Spice Mix, now I'm going to share with you a recipe that includes it with these cupcakes.

Let's get baking!

Ingredients:
Cupcakes:
150g unsalted butter
150g light brown sugar
3 medium eggs
1 tsp vanilla extract

150g unsalted block butter (not stork), softened
300g icing sugar
1/2 tsp pumpkin spice mix
1/2 tsp vanilla extract

Start off by pre-heating your oven to 180C/160C Fan/Gas Mark 4 and line a 12-hole muffin or cupcake tray with cupcake/muffin cases.

Next cream together the butter and light brown sugar with an electric beater until smooth.

Add in the eggs, flour, pumpkin spice mix, vanilla extract and instant coffee dissolved in 1 tbsp of boiling water, and beat again for about 20-30 seconds on a medium speed.



Using a cookie scoop, scoop your batter into your cases and bake in the oven for 18-20 minutes, or until cooked through.
Leave to cool on a wire rack.

For the frosting, beat the softened butter until smooth, which can take a couple of minutes.

Add in the icing sugar, pumpkin spice mix, vanilla extract and beat fully, making sure the sugar is full incorporated.
If it's a little thick, add in a tablespoon of boiling water to loosen slightly, add more if needed but add 1 tbsp at a time.


Once your cupcakes are completely cool, it's time to decorate. I piped the frosting onto my cupcakes.


This recipe was really easy an simple to make, the only difference between mine and the original recipe is I didn't beat my eggs as I didn't know they need to be beaten until it was time to add them, so I don't know if that changes the finished product at all. 
I loved the flavour, they're very moreish and I will happily bake these whenever we're in the autumn months.
