Banana Bread

Today is another bake that I've never done, especially since school, and even then it wasn't banana bread. I've never even thought about baking banana bread, but I'm glad I did.

Lets get baking!

Ingredients:
125 g butter
125 g soft light brown sugar
2 tsp baking powder
225 g plain flour
2 eggs, beaten
450 g ripe bananas (about 3-4), mashed

Start off by greasing a 900 g loaf tin with butter and line with baking paper, and heat the oven to 180C/160C Fan/Gas Mark 4.
Neat pop the butter and sugar into a bowl and beat together for 2-3 minutes or until fluffy.

Put in the baking powder, half of the flour, half the eggs and half of the mashed bananas, and give them a good mix.


Then add the rest of the flour, eggs and mashed bananas, and give another good mix together.

Spoon the bread batter into the loaf tin and level out, then pop into the oven and bake for 40-45 minutes, or until a skewer inserted into the middle comes out clean.

Cool the banana bread for 10 minutes, then turn it out of the tin.

Allow the banana bread to cool completely and then you're ready to serve.


I will happily bake this again, I really enjoyed it, it was really soft and full of flavour, Skye on the other hand wasn't a fan, she can be really picky with food at times.
It was really easy to make and the recipe I used was really easy to follow, the only time consuming part was the baking time, but it was all worthwhile when it came to tucking into a slice.
