Chicken in Orange

It's time for another tried and tested recipe from the Pinch of Nom Everyday Light recipe book and part of the Fakeaways section.
Let's get cooking!

Ingredients:
Low-calorie cooking spray
500 g chicken breast (skin and visible fat removed). diced
1 medium onion, diced
1/2 red chilli, deseeded and finely diced
500 ml chicken stock (2 chicken stock cubes cubes dissolved in 500 ml boiling water)
100 ml no-added-sugar orange squash
1 tsp onion powder
3/4 tsp xanthan gum
1 tsp rice vinegar
1 orange, peeled and cut into segments
4 spring onions, trimmed and thinly sliced

Spray a wok with the low-calorie cooking spray, and over a high heat, stir fry the chicken, diced onion and chilli for 4-5 minutes, until the chicken is well browned. Once done remove to a plate and wipe the pan clean.

Into the wiped clean pan, pour the stock, orange squash and onion powder into the wok, return to the heat and bring to the boil.

Remove from the heat and add the xanthan, 1/4 tsp at a time, whisking well for a minute between each addition.


When thickened, add the rice vinegar and return the onions and chicken to the sauce. Return to the heat and simmer for 3-4 minutes, until the chicken is cooked through and no longer pink in the middle.


Stir in the orange segments and spring onions. You can also cool and freeze to keep for another day, make sure to defrost fully before reheating.

Now you're ready to serve.

When I saw all the ingredients for this dish, I was expecting it to be really hard and take a lot of time to cook, but I found the recipe really easy to follow and it's a quick dish to make. 
I thought this dish was full of flavour and I'd happy make it again, even Skye seemed to enjoy it and she can be really fussy with these types of dishes. I think this is a perfect dish if you're fancying a take away and either trying to eat better or don't have the funding for one.
