Roasted Chicken and Rainbow Vegetables

This recipe I had saved on my Facebook saved pages and I've had it saved for quite sometime, a few Sunday's a go, I decided to give it a try for something new for us to try.
Let's get cooking!

Ingredients:
Vegetables
1 red onion, diced
300 g broccoli florets
1 yellow bell pepper, sliced
240 g baby carrots
300 g cherry tomatoes
3 tbs olive oil
10 sprigs fresh thyme
3 garlic cloves
Salt and pepper to taste
Chicken
4 chicken breasts
Olive oil
1 pinch paprika
4 sprigs fresh thyme
4 garlic cloves
Salt and pepper to taste

Start off by pre-heating your oven to 200C/400F, then in a baking tray place the red onion, broccoli florets, yellow (I had to use red) bell pepper, baby carrots and cherry tomatoes.

Season the vegetables with olive oil, salt and pepper, and then add the sprigs of thyme and garlic cloves on top of the vegetables.

Tear off 2-4 pieces of foil, depending on how many chicken breasts you're cooking and lay down the foil. Place the chicken breast in the middle of each foil sheet, then season both sides with olive oil, salt, pepper and paprika.

Next add the garlic cloves and sprigs on thyme onto each of the chicken breasts.

Seal the foil over the chicken.

Place all the chicken breasts onto a baking tray and bake everything in the oven for 30 minutes.
Once cooked you're ready to serve and enjoy.


This recipe was really easy, quick and simple to follow and make, this is one of those dishes that is perfect after a long day at work, when you don't want to be in the kitchen standing over the cooker and hobs cooking. It's quick and simple as popping it all in a baking tray, popping in the oven, baking for 30 minutes and then dishing up and enjoying.
I personally really liked this dish, I found it full of flavour, as well as it being really colourful and enjoyable to eat. I'll happily cook this again.
