It feels like it's been quite a while since I shared a cooking post with you, it doesn't really help that I've not really done or tried any new recipes but I'm definitely making a list of new things I want to attempt to make to share with you. Today though I want to share with you a recipe from the popular recipe book Pinch of Nom, today I'm sharing with you Creamy Garlic Chicken.

Ingredients:
400 g chicken breast or thigh meat, thinly sliced
(skin and visible fat removed)
sea salt and freshly ground black pepper
Low-calorie cooking spray
1 tsp white wine vinegar
1 tbsp Worcestershire sauce
400 ml meat stock
(1 beef stock cube dissolved in 400 ml water, mixed with 1 chicken stock pot)
1 onion, sliced
250 g button mushrooms, thinly sliced
3 garlic cloves, thinly sliced or crushed
1 tsp Dijon mustard
175 g low-fat cream cheese
First up after slicing the chicken, season the chicken slices with a little salt and pepper, then set aside.
Next spray a large frying pan with low-calorie cooking spray and place over a medium heat, then add the chicken and quickly seal it on all sides, then remove and set aside.
Return the pan to the medium heat. Add the vinegar to the Worcestershire sauce and deglaze the pan with the mixture, scraping and stirring the browned bits from the bottom of the pan.
When most of the liquid has evaporated, spray the pan with some more low-calorie cooking spray. Add the onion, mushrooms, garlic and saute for 5 minutes.
When the mushrooms, onion and garlic start to brown add the Dijon mustard and cook for a further minute or two, stirring.
Add the stock to the pan and simmer until it's reduced by half.
Once reduced, reduce the hear to low and stir in the cream cheese, making sure there is no lumps of cheese.
Return the chicken to the pan, stir well and let simmer for 5-10 minutes, until the chicken is cooked. If the sauce seems a little thick you can add some water until it reaches the consistency you prefer.
Once ready sprinkle with chopped chives and paprika, if desired. Now you're ready to serve.
Skye wasn't too fussed about this dish and I couldn't make my mind up on whether I liked it or not, I wasn't really a fan of the garlic but I loved the creaminess from the cream cheese. I'd happily try it again and have it served with rice and decide after trying it again whether I'm a fan of this dish. I'd definitely say give this recipe a try, what one doesn't necessarily like another may well do. Its a really easy and simple recipe to follow and good if you're following diets such as Slimming World.
