ATEEZ Funfetti Cupcakes

Back in March, Skye turned 18 and I wanted to make some special cupcakes as we were still on a high from seeing ATEEZ in January. So I went on the hunt to see what I could make and came across this recipe of Funfetti Cupcakes from Jane's Patisserie. I also added my own twist in making the buttercream black and orange to symbolize ATEEZ.

Let's get baking!

Ingredients:
Cupcakes:
150g unsalted butter
150g caster sugar
3 medium eggs
150g self-raising flour
1/2 tsp vanilla extract
100g brightly coloured sprinkles

Vanilla Buttercream Frosting:
200g unsalted block butter
400g icing sugar
1-3 tbsp whole milk/boiling water
1/2 tsp vanilla extract

Start off by pre-heating your oven to 180C/160C Fan and line a muffin tray with cupcake cases.

Next cream together the unsalted butter and caster sugar until smooth.

Once smooth add in the eggs, self-raising flour and vanilla extract and beat again for about 20-30 seconds on a medium speed.


Fold through the sprinkles and make sure they're evenly dispersed.

Spoon the mixture into your cupcake cases and bake in the oven for 18-20 minutes or until cooked through.
Then, leave to cool on a wire rack.


For your buttercream frosting, beat the softened unsalted block butter until smooth.

Once smooth add in the icing sugar 1/3 at a time, making sure the icing sugar is fully incorporated.

Once all the icing sugar is mixed in, keep on beating the frosting while you add the vanilla extract and the whole milk 1 tbsp at a time until you reach your desired consistency.

Once ready, I split the frosting evenly between 2 bowls and made on half black and one half orange.

Next I placed the mixtures in separate piping bags and place both into a larger piping bag and piped onto each of the cupcakes.

These cupcakes were really easy to make, they're perfect for even a novice baker.
The flavours were really nice and the cupcakes themselves were moreish. They went down a treat with everyone that had one.
They're definitely up there as one of my favourite cupcake bakes.
