My main resolution this year is for myself and Skye to eat more at the table and with that I want to try out new recipes for us to enjoy together. First up is a recipe I came across on the Tesco website and thought I'd give it try.
Ingredients:
2 tbsp light soy sauce
1 lemon, juiced
1 tsp sugar
3 chicken breasts, cut into bite size pieces
2 tbsp cornflour
2 tbsp sesame seed oil
4 spring onions, thinly sliced
1 tbsp sesame seeds
For Sauce:
1 small onion, roughly chopped
1 tbsp cornflour
2 lemons, zest and juice
1-2 tbsp clear honey
To Serve (Optional):
Rice
Broccoli
I started off by by roughly chopping my onion.
Then thinly slicing the spring onions.
Then I cut my chicken, which I used mini fillets instead of normal chicken breasts.
Next in a bowl, put the soy sauce, lemon and sugar, and place in the chicken to marinate. Mix to coat and then cover and chill for 10 minutes.
While my chicken was marinating I got the zest and juice from my remaining 2 lemons.
In a bowl add the 2 tbsp's of cornflour, remove the chicken from the marinate with a slotted spoon and toss into the cornflour. Heat 1 tbsp of the sesame seed oil in a wok or large frying pan over a high heat. Add the chicken and and stir-fry until it's crisp and cooked through.
Once cooked remove from the pan onto a plate on kitchen roll if you have any.
Next is to start on the sauce, place the other 1 tbsp of sesame seed oil in the pan and add the onion and cook for 10 minutes, until soft.
Mix the cornflour with 1 tsp of water to make a paste, then add to the pan with the lemon zest, juice, honey and 200 ml of water. Bring to the boil, stirring until the sauce begins to thicken.
Next add the chicken pieces and coat in the sauce, then stir in the spring onions and sesame seeds.
You're now ready to serve, I served mine with rice and broccoli.
I'd happily attempt to cook this again now I know what I'm doing, the sauce was meant to be lighter but because I overdid my onion, it made it darker. I also added the marinate into it too which gave it more of a lemon taste which Skye didn't like. I really liked it and I think I'd like it even more if I stuck to the recipe more and didn't add any extra like I did. Overall I think this is a good recipe to make, it's family friendly, healthier as you know whats going into the dish and it helps with your takeaway cravings.
