Cooking: Beetroot Soup & Eggy Cheeseburgers

Today I have not one but two recipe's I'd like to share with you, hopefully you will give at least one of these recipe's a go if not both, 1 dish I've made before and loved it so thought I'd create it again to share the recipe and the other was a first time make after seeing it online.

Beetroot is not for everyone so I know some will be reading this and thinking Beetroot soup? eurgh! I personally love beetroot and find myself at times just having a bowl of it as a snack, so when I found this recipe in my Biggest Loser cookbook I thought why not? check out the recipe below.


Ingredients:
Olive oil
1 small onion
4 raw beetroot
(I used 5 cooked beetroot)
2 garlic cloves
1 x 227g can chopped tomatoes
a small pinch of ground cumin
a small pinch of ground coriander
350ml chicken stock or water
(I used water)
salt and freshly ground black pepper

150g natural yogurt
a handful of fresh chives.

This recipe serves 2 people

I started by chopping up the onion.

Added olive oil to a deep pan and cooked the onion for about 5 minutes.

While the onion was cooking I cut up the beetroot and the garlic cloves.




Then added both the beetroot and garlic cloves to the pan with the onion and cooked for another 5 minutes.

Next I added the chopped tomatoes, ground cumin, ground coriander and the 350ml of water and brought it all to a simmer, and then left it to simmer for 20 minutes.


After 20 minutes take the pan off the heat and season with salt and black pepper to taste (I didn't season mine), then transfer the soup to a food processor or blender, you can also use a handheld blender and whizz until smooth.


You can serve up straight away or reheat if desired, decorate each bowl with a generous swirl of the natural yogurt and sprinkle over the chopped chives.
Serving option 2 slices of fresh bread.

This next recipe I found on Facebook but sadly I didn't save the recipe to tag it into this post, but I'm sure it would be easy to find online, check out the recipe below, depending on how many you are cooking for you can easily change the amounts that I used.

Ingredients:
6 sliced bread cakes
6 beef burgers
4 eggs
6 cheese slices

You maybe wondering why 6 of each of the ingredients apart from the eggs, well Skye only wanted cheeseburgers so eggs weren't cooked for hers.

I started off by placing my beef burgers on a chopping board and then cutting out a circle out of 4 of the burgers.


Next I added some olive oil to a frying pan and added 3 of the burgers and cooked.

Sorry no pictures for these next steps.

I turned the burgers to cook on the opposite side and turned back again and broke the eggs into the holes in the burgers to cook.

Turn over again to cook the other side of the egg.

Turned again and then added a cheese slice to each of the burgers, cooked for a few minutes and then added them to a plate, and repeated the process for the other 3 burgers.

Once all cooked I prepared the sliced bread cakes and added a burger each, added some ketchup and they were ready to serve.

These burgers were amazing and I can't wait to give these another go, I thought I may have over cooked the eggs but when I bit into mine the yolk was still nice and runny, just how I like it.
