While hunting for something to make with some spare eggs as well as for something to make for food during night shifts at work I came across this homemade egg mayonnaise recipe and thought I would give it a try.
Let's get cooking!
Ingredients:
2 soft boiled eggs
1 tbsp mayonnaise
1 tsp Dijon mustard
1 tsp chopped chives
1/2 tsp black pepper
1/8 tsp cooking salt
2 slices white bread
butter
If you haven't already start off by boiling your eggs for 8 minutes in boiling water.
Cool the eggs in a bowl of cold water for 10 minutes. Then peel.
Place the eggs in a bowl and crush with a fork. Once mostly broken up, use a potato masher to mash them up really well. The smaller the egg whites, the creamier the filling.
Add the mayonnaise, mustard, chives, black pepper and salt. Gently stir to combine everything together. Taste and add more salt if needed.
Butter your bread and share the mixture if needed. I made enough for 2 sandwiches. Now you're ready to enjoy.
I've made this a few times since and really enjoyed it each time. I think mine came out runnier because I didn't use as many eggs as the original recipe, Because I'm the only that likes it, I only made enough for myself to get me through a couple of days.
It was really easy and simple to make and doesn't take up much time either.
