Baking Goods: Rainbow Polka Dot Birthday Cake

I thought I'd do a random baking blog along with my normal other weekly blogs as Saturday I baked a cake for my friend Liv for her birthday get together with the rest of her family. Even though I personally wasn't happy with the red icing the whole cake I'm general I was proud of.
Like always I get that into baking  that much I forgot to take pictures on some of the steps but I'm sure you'll get the idea.


Ingredients:
125g Butter
225g Plain Flour
150g Golden Caster Sugar
3 Medium Eggs (recipe instructed that they had to be the same and exact size)
1tsp Baking Powder
Pinch of Salt
1tsp Vanilla Extract 
Edible Food Colouring:
Red
Yellow
Green
Blue
Purple
Pink
Ivory

The ingredients above had to be used three times hence why in the pictures above shows all three sets of my ingredients measured out and ready, I placed the baking powder and salt into the flour to sieve in when ready. 
I greased two 21cm sandwich cake tins and placed prepared baking sheets into the bottom of each tin and preheated the oven to 180°c.

The first step was creaming the butter and golden caster sugar together. 
Once that was finished I added each egg one at a time and mixed it in rill I was happy the egg was mixed in.
This was my third and final egg.
Next I sieved in the flour, baking powder and salt and mixed that all together ready for the next step.
The final addition to the cake mixture was the vanilla extract and mixed it together for a final time.
Then I weighed the mixture so I could half the mixture into two bowls ready to add the food colouring.
My cake mixture weighed out at 650g all 3 times.
The first two colours I used was Red and Yellow and as soon as they were a colour that Liked I placed them in the cake tins and placed them in the oven for 12 minutes.
Once the cakes had cooled I placed new and clean baking sheets in the bottom of the tins and repeated the above process a second and third time to create the Green, Blue, Purple and pink cakes. I also decided to make a 4th batch of cake mixture to do her name for the cake and the Ivory cake.


Next was the messy part where I mixed the buttercream together and layered buttercream and raspberry jam between each cake and covered the whole cake and placed on the fridge for a few hours.
Buttercream Ingredients:
580g Icing Sugar
250g Butter
1tbsp Milk
1tsp Vanilla Extract 
Purple Food Colouring 

I did this recipe twice one for the layers and one for covering the cake. I sieved in the icing sugar and then added the butter and creamed it together with a fork, then added them milk and vanilla extract mixed it together and then added a small amount of purple food colouring. I then spread the buttercream on the top of each cake and spread raspberry jam at the bottom of each cake apart from the bottom cake. Once the cakes were fully covered (including the letters) I placed them in the fridge.
A few hours later I got the cakes out of the fridge and started decorating the cake starting with rolling out and placing Marzipan into the main cake. Then I rolled out red icing and placed it over the Marzipan this took two attempts as the icing kept cracking and ripping so I had to place strips of red icing over the gaps and attempted to smooth it out.
I then rolled out pink icing for the letters and placed it over and smoothed it out.
Lastly I rolled out white icing and used a small & medium sized round cookie cutter to make the white polka dots and 7 small white butterflies for the letters. To stick on the circles and butterflies I just put water on the bottom of each one, the final touches were 3 purple feathers, 2 red sparkler candles and 3 normal candles.

The proud moment for me and the real masterpiece was when the cake was cut into and you saw all the different coloured layered cakes.
Well that concludes this baking blog and the cake was well received all round and I got lots of praise for both it's appearance and taste which made it all worthwhile.
